Rocket, Sprouts, Grilled Capsicum & Nuts Salad

This is a gorgeous & bitey “nutty-sprouty” explosion of freshness. Love it.

2-3 cups Rocket lettuce leaves
1.5 cups fresh bean sprouts
.5 cup grated carrot
4 spoons Pine Nuts
4 spoons Pepitas seeds (Pumpkin seed)
.5 to 1 cup chopped fetta cheese
.5 to 1 finely chopped (slithers) red & green capsicum

1. Fry capsicum to grill appearance (sit aside)
2. Toast/Fry nuts slowly in vegetable oil in a pan (start with pine or bigger seed first) then (sit aside)
3. On a nice white serving platter layer rocket, sprouts and carrot in layers evenly, then top with fetter, capsicum and nuts. Before serving, splash some flaxseed or olive oil.
